Almond Butter Toast

This is my go-to snack when I’m craving something sweet, yet filling. It’s balanced, delicious, quick, and easy- what more could you ask for?

I don’t tend to look at my food as macronutrients (carbohydrates, fat, and protein), but after tasting how delicious this was, I decided to take a look at the break down; this meal comes in at 500cals, 60g carb/20g fat/29g protein.

I prefer to eat what my body craves, when it craves it- some people call it intuitive eating. It’s taken me awhile to learn how to listen to my hunger cues, but since switching over to a plant based diet, I’ve fallen into a comfortable way of eating. I absolutely¬†love what I eat; it fuels me, its simple, it’s fresh, it tastes delicious, and it makes me dance (yes, I really do dance in excitement before dinner). This meal came to me one weekend when our fridge was empty and I was hungry. Thankfully I always have a few staple ingredients on hand.

Almond Butter Toast
Makes 1 serving

2 slices sprouted grain bread (I used Silver Hills Squirrelly)
1tbs almond butter
1tbs hemp hearts
1tbs pumpkin seeds
1/2 banana, sliced
dried cranberries

Toast ya bread. Spread ya almond butter. Top with ya toppings. Do a lil dance. Enjoy the heck outta your food.
